Cookie Week {Day 1}: Pecan Coconut Butterscotch Squares

Cookie week is finally here!

I believe in blogging honest, so I’ll tell you that I am completely flying by the seat of my pants as far as cookie week goes.  December has been so busy that I haven’t had a chance to get everything done and ready to go ahead of time the way I’d planned.  As far as what you can expect in the coming week, your guess is as good as mine. I can promise you that it will be fun and that I’ll share some of my most favorite recipes of all time! We start today, with Pecan Butterscotch Coconut Squares. They are every bit as scrumptious as they sound. They’re among the most loved with my giftees and  couldn’t be any simpler to make if they tried {not that cookies could try to do anything, but you get my point}

Pecan Coconut Butterscotch Squares

Ingredients:

For the Crust:

  •  2 Cups Flour
  • 1 Cup brown sugar
  • 10 Tablespoons Butter

For the Filling:

  • 4 large eggs
  • 1  and 1/3 cups brown sugar
  • 4  Tablespoons flour
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 2 cups chopped pecans
  • 2 cups shredded coconut
  • 1 and 1/2 cups butterscotch chips

Preheat oven to 375 degrees.  Grease 9 X 13 pan, line with foil and grease {or nonstick spray} foil. Mix the ingredients for the crust until combined {may be a little crumbly, but don’t panic, that’s A-OK}  Press  mixture evenly into prepared pan. Bake for 15-20 minutes or until lightly browned around the edges.

While the crust bakes, combine all the ingredients for the filling. Pour filling over the warm crust and bake for 20-25 more minutes  until golden brown. Cool in pan on a wire rack for 5 hours or more until cutting. Use foil to remove from pan and slice away!

When I use these in my Christmas cookie gifts, I cut them into very small 1-2 inch squares, just enough for a couple bites!

    okay seriously I love to bake, like L-O-V-E to bake! I am also a big time recipe collector so I can not wait to stash away all your recipes for safe keeping. My holiday baking list usually includes some if not all of the following: peppermint bark (its white & dark oooo), spiced almond brittle, chocolate peppermint gooey bars, chocolate chip cookies, iced sugar cookies, and cranberry oatmeal bars. Though apparently my husband was so nice as to volunteer me for a goodie platter first Friday of Jan so I’ll for sure be baking a storm around New Years….a platter of goodies for 40+ construction dudes makes for a lot of baking.
    I am happy to say though I am passing it on, my son and I had our first baking adventure last week and it went amazingly he loves pouring all the ingredients in for me to stir. I might just have to enlist his help this holiday season.
