My Top 3 Favorite Crockpot Recipes

Can you believe I only just discovered the wonder, the amazement, the MIRACLE that is slow cooker cooking just last year?? ‘Late to the party’ would be a gross understatement.  If you follow me on twitter, you may even remember my joking about having discovered a new hobby……the hobby of crockpot-ery.  Getting a slow cooker has seriously been a welcome and much loved addition to my cooking repertoire.  And there is just something about it that absolutely delights and fascinates my kids.  From the very moment I start something in the crockpot, they swarm around it periodically throughout the day like flies around a dung pile {no thanks necessary  for the lovely imagery} in anticipation.  Really. Even my most finicky eater will try almost ANYTHING if it comes from a crock pot. Go Figure.

We have tried quite a few recipes, but I wanted to share the ones we turn to again and again.  These recipes work their way into our menu at least bi-weekly, if not on a weekly basis.

In 3rd place: Lake Lure Cottage Kitchen Teriyaki Chicken

Delish served over brown rice with steamed broccoli.

In 2nd place: Slow Cooker Chicken Parmesan {Full bellies, Happy Kids}

The recipe calls for breasts, but it is SO good with boneless, skinless thighs as well.

Our #1 FAVORITE crockpot recipe: Crock Pot Chicken Taco Chili

My kids love to eat it with tortilla chips, and my husband and I eat it over baked sweet potato. SO. SO. Good.

    I’ll be honest I have tried the crock pot a few times and it still scares me. Call me odd but I love slaving away at the stove top even when battling two kids and a ton of chores.

    • You know what, Christina? I don’t think that you’re odd at all. In fact, 8-10 years ago I would have probably said the same thing & that may well be the reason it took me so long to “discover” the crockpot. But, as my kids have gotten older, as I am less tied to home, and as life has gotten busier, the crockpot seems to be working it’s way in to our lives more and more. XO

  2. I,too, dabble in crockpot cookery. In general, I don’t use recipes very often. I rarely measure; I have a feel for how much to add. I guess that is something I picked up from all of my years of cooking at the museum. Working full time,the crockpot is a lifesaver sometimes!

    • I can only imagine that the crockpot is a real lifesaver for you, Nik. I, too, someday hope to be a seasoned crockpot “veteran” and be able to cook in it without recipes. But, for now, I will spare my family & use recipes 🙂

      P.S. I’m glad you’re giving yourself the semester off from your doctorate. Maybe that will mean more time for old friends……. 😀

  3. Those look very yummy! I’ve started pinning recipes for slow cookers. I just got a new one after living with the original one I received for a wedding shower gift (some 23+ years ago!) Our old one was a small, rectangular one so i felt it was time to upsize for our family. I love doing pork chops in the slow cooker because whenever I cook them they are always tough. Well, last week, when I pulled the chops out of the slow cooker, they were STILL tough – and not cooked! I had them on “warm” – not “high”! I was so mad – mad at myself for not properly reading the buttons – and mad at the slow cooker design for having the warm button right after the high button…..I guess I’ll never make that mistake again…..

    Thanks for giving me some great recipes to try!

    • Oh my gosh! I think we might have the same crockpot {my warm button is near the HIGH} and that is SO something I would do!! I’ll make doubly sure to neverlet that happen. I just learned from your mistake!! XO

  5. I am on my own and was given a “single” serving Crockpot as a gift. I don’t like leaving it on during the day when I’m at work but occasionally use it on the weekends. I have one recipe I always use..stewing beef, potatoes cut into cubes, carrots, red peppers, red or regular onion, a small can of tomato sauce and I add some Heinz chili sauce for a kick and turn it on high for about 4 hours and then on low for another 2 or so and voila, add a salad and a glass of wine and I’m all set. I will have to try your chicken parmesan one though.
