Coconut~ Ginger Zucchini Bread {recipe}

I have for you today…..

A recipe!
And this one’s delicious. Well, they all are, but let’s just say this zucchini bread recipe ranks up near the top of the ‘ best zucchini bread ever list.’ No, I’m not sure such a list even exists, but if it did this recipe would be on it for sure.  In fact, someone said to me just last night, “I don’t even like zucchini bread, but this is delicious!”  For. Real.

I love this recipe not only because it’s so yum, but also because it is a way to get green veggies and some good coconut oil into my one child who abhors green veggies and all things healthful. {he literally only ate pancakes and yogurt for the entire first three years of his life.}

Enough of the chatter, let’s get down to thee recipe:

Coconut  Ginger Zucchini Bread:

Preheat oven to 350 degrees and prepare two standard loaf pans.

2 cups finely grated zucchini {I use the fine grate side of a cheese grater}

1 cup white sugar
1 cup Turbinado sugar {or regular brown sugar}
1/2 cup canola oil
1/2 cup virgin coconut oil*** { you may have to microwave this for 20 second to warm and bring from a solid to a liquid state. But, trust me, the coconut oil is worth this little bit of effort}
3 eggs
1 teaspoon vanilla

3 cups unbleached white flour
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground cloves

~Combine sugar, oil, eggs, and vanilla. Add zucchini.  Sift {I ALWAYS skip the sifting part}dry ingredients together then blend into the wet mixture. Mix JUST until combined.
~ Pour into prepared bread loaf pans and bake for 60 minutes at 350.

***you CAN use all canola oil if you don’t have the coconut oil available. But I CANNOT promise the same delish factor if you do this 🙂

  1. Hey Sara, just checking out the new blog…nice!! And I wanted to say I just made some coconut zucchini bread similar to this. So good, and I really dig the coconut oil! Next time I’m going to have to try this recipe. Ginger is another one of my favorite tastes.
