White Chocolate Banana Bread {{Recipe}}

{I had to say that or I would get all sorts of snarky blog & facebook comments. Well, it’s true.}

This one is DELISH and so, so easy.  The white chcocolate chips, which never actually re-solidify after baking, make little pockets of sweet & YUM goodness throughout the bread.  The recipe doubles beautifully.

White chocolate banana bread:
Mash 2-3 medium {very ripe} bananas in a bowl
Mix with
3 T. milk
1/2 t. baking soda
set aside
Combine dry ingredients in a seperate bowl:
2 c. flour
1 t. baking powder
dash of salt
Cream these ingredients in a mixing bowl:
1/2 cup butter or margarine
1 cup sugar {I use turbinado}
1 egg
1 t. vanilla

Add dry ingredients to butter mixture. Mix until a crmby dough forms {don’t over mix!}  Add banana mixture, and give it a mix, JUST until combined.
Add scant 1/2 cup white chocolate chip and stir gently.  {In the case of the chips, more is definitely not better, as too many chips makes it difficult for the loaf to bake properly}
Bake in a preheated 350 degree oven for 60-65 minutes in a standard loaf pan.
